Sandwich bread
- egg 1
- instant yeast 4g
- honey 60g
- warm milk 165g
- warm water 60g
- salt 9g
- bread flour 410g

Add your yeast and mix together all wet ingredients in a bowl. Whisk the egg before combining.

Add the bread flour gradually and mix until a soft dough forms.

Rest the dough (covered) for about 15 minutes.

Then continue kneading until the gluten has started to develop and the dough comes together.

Add salt and knead for 2-3 more minutes till the dough passes a light windowpane test.

Cover and let rise until doubled, about 1 hour.

Gently shape into a loaf.

Place into a buttered ~24cm by ~10cm loaf pan. Cover and let rise until puffy but still slightly springy when pressed, about 20-30 minutes.

Preheat oven to 180C (mid).

Brush lightly over the loaf with egg wash.

Bake for 30-35 minutes.

Cool in the pan for 5 minutes, then remove and cool completely before slicing.
